Chinese White Tea
From the beautiful coastal region of Fujian, this tea is known as Yin Zhen or 'Silver Needle' because of the shape and colour of the leaves.
Very delicate and hay-like, leaving a fresh aftertaste with a hint of sweetness. The brew is the colour of champagne, sparkly pale and iridescent.
To brew: steep 1 tsp in 80C water for 3 mins
